Eat Out of the Box… The CSA Box!

I am thrilled to be a contributor to FabUplus magazine, a fat-positive magazine for women of all sizes who want to honor and care for their bodies while rocking their curves!  So many of the articles support the Health At Every Size philosophy, Intuitive Eating, body liberation, self-care, and joyful movement – all of which add up to a bunch of awesome women living their full lives in the skin they are in!

The focus of this summer’s issue is to step out of your comfort zones and try something new.  As a Registered Dietitian, I thought a great way to be adventurous would be to have people think outside of the box by eating outside of the box… the CSA box (or community supported agriculture or farm share)!  Supporting local farms by joining their CSA program benefits both you and the farmer; you receive a weekly box filled with fresh produce, herbs, and flowers (the contents and price differ by farm) and the farm is guaranteed payment for their harvested bounty.  To find a participating farm in your area, check out the article for search links in the US and Canada.

Whether or not you participate in a CSA farm share this summer, you can still enjoy fresh produce this season. Small tomatoes – grape tomatoes, cherry tomato, and yellow pear tomatoes to name a few – are readily available in stores and in backyard gardens during the summer months. Enjoy them year-round with my internet-famous Roasted Grape Tomato Sauce recipe that can be eaten immediately or frozen for up to a year!
