Who doesn’t love a Super Bowl party? Even if your team isn’t playing, there are still other aspects of the event to enjoy: The commercials, the half time show, and of course, the snacks! If ever there was a day to remind yourself that it’s okay to enjoy all things in moderation, the Super Bowl is the day! There are some favorite classic Super Bowl snacks that we see at these parties, like Buffalo wings, pizza, and beer. And what would a Super Bowl party be without Ro*Tel Queso dip?! This year, I have decided to serve all of these classics, but with a twist: I have slimmed down the snacks so that you can enjoy them all as you cheer on your team (or Katy Perry)!
Buffalo chicken wings are a snack that meat lovers adore. But what about the vegetarians? Here’s an option from Vegan.com for Cauliflower Buffalo Wings. Simply dip the florets into the batter, bake for 20 minutes until they brown, and remove them from the oven for a second dipping.
One by one, dip the florets into your favorite hot sauce, and put them back into the oven for 10 more minutes. Serve them as you would regular wings with some celery and Blue Cheese dressing, or try my homemade Ranch Dressing Dip.
Pizza is a staple food for most sports-viewing parties, but at a Super Bowl party, a couple of slices of pizza could fill you up and cause you to miss out on all of the other goodies. What if there was a way to have just a bite of pizza? And what if that bite had more protein than your regular pie? Enter in the fabulous Quinoa Pizza Bites from Chocolate Covered Katie. They are super-easy to make. If you have never made quinoa before, check out this how-to recipe. Mash all of the pizza bite ingredients together except for the mozzarella cheese, and roll them into balls. Then push a piece of the mozzarella into the center of each ball and seal them back up before baking.
The result is a crunchy, gooey, bite of protein-packed pizza – delish!
Last, but certainly not least on my list of slimmed down snacks for the Super Bowl is Ro*Tel Queso dip. This classic recipe calls for only two ingredients: Ro*Tel Original Tomatoes and Diced Green Chiles and Velveeta. My slimmed down version of the recipe adds only one extra ingredient, but lowers the calories and increases the vitamin A, vitamin C, and potassium content of this party favorite! GGL’s Slimmed Down Super Bowl Queso Dip
Serves a Super Bowl Party
1 can Ro*Tel Original Diced Tomatoes and Green Chiles
16 oz Velveeta, cut into 1″ cubes
1 cup pureed pumpkin (either homemade or canned pure pumkin)
Place all ingredients into a small pot. Over medium heat, stir the contents until all of the cheese is melted. Remove from heat and enjoy immediately with your favorite chip or veggie!
