This easy vegetarian and vegan Tortilla Soup recipe is also gluten-free. If you have Irritable Bowel Syndrome and have gone through the three phases of the Low-FODMAP Diet and can tolerate foods containing galactooligosaccharides (GOS), then you can enjoy this soup as well!
Every winter, my family enjoys Tortilla Soup. Over the years, I have adjusted the recipe to accommodate my personalized low-FODMAP diet, but in recent years, I’ve had to make some other changes. My daughter eats a vegetarian diet and has been missing out on the Tortilla Soup, so in order to include her in the yearly tradition of eating hearty soups for dinner, it was time to make a version that she could enjoy.
Traditionally, Tortilla Soup is made with beans and corn – both of which are high-FODMAP ingredients – but since my daughter doesn’t have Irritable Bowel Syndrome, she is happy to consume them. I omitted the chicken and replaced the chicken stock with vegetable stock from my original recipe and voilà! – Vegetarian Tortilla Soup was created! This soup is also a perfect recipe for those with Celiac disease or who avoid gluten. Served with corn tortilla chips, this dish contains whole grains and fiber.
If you cannot tolerate onions or garlic, you may want to substitute your taco seasoning for FODY Foods Taco Seasoning* and Casa de Santé Garlic and Onion Substitute* in place of the garlic. These ingredients are also certified gluten-free.
Easy Vegetarian Tortilla Soup Recipe
This easy recipe is vegetarian, vegan, and gluten-free
- 28 oz can of fire-roasted diced tomatoes
- 15 oz can of black beans rinsed and drained
- 15 oz can of kidney beans rinsed and drained
- 4 oz can of fire-roasted, diced green chiles
- 2 cups frozen corn
- 3 tbsp taco seasoning (I used FODY foods for this one)
- 4 cups vegetable stock or broth stock will provide more flavor
- 3 tsp minced garlic or use asafoetida or hing powder as a substitute
In a medium pot, combine all ingredients and heat on high until boiling. Reduce to a simmer and continue to cook until the soup thickens slightly - about 25-30 minutes.
Serve with crushed tortilla chips at the bottom of the bowl and add shredded cheddar cheese and sour cream to the top. Feel free to use vegan cheese and sour cream for those following a vegan diet. Make sure your taco seasoning is gluten-free if you are serving the soup to someone with Celiac disease.
Serve this Easy Vegetarian Tortilla Soup with crushed tortilla chips at the bottom of the bowl and add shredded cheddar cheese and sour cream to the top. Serve tortilla chips on the side for a fun eating utensil. Feel free to use vegan cheese and sour cream for those following a vegan diet. Make sure your taco seasoning is gluten-free if you are serving the soup to someone with Celiac disease.
