This easy recipe is vegetarian, vegan, and gluten-free
In a medium pot, combine all ingredients and heat on high until boiling. Reduce to a simmer and continue to cook until the soup thickens slightly - about 25-30 minutes.
Serve with crushed tortilla chips at the bottom of the bowl and add shredded cheddar cheese and sour cream to the top. Feel free to use vegan cheese and sour cream for those following a vegan diet. Make sure your taco seasoning is gluten-free if you are serving the soup to someone with Celiac disease.
